My bookcases are filled with cookbooks. Never have I read one from cover to cover, that is, until now. Eric not only includes recipes that are easy to follow and look delicious, the first and last sections of the book provide helpful hints from firing up to extinguishing.
He has numerous time and money saving ideas spread throughout. All I heard from my guests was "YUM". I was worried about the pork butt being too large [ servings], but my 6 guests went back for 2 and 3 helpings each! I wonder if by mistake I inverted the roast [fat side down] and maybe that prevented it from crisping up.
Please understand, it was delicious as is. My husband just likes the crispins. Do not hesitate to purchase this book. You will not be disappointed! I think this weekend I will try the scallops!
Thanks Eric. I hope there are more cookbooks to come! This book was highly recommended by a Big Green Egg group on Facebook, and they were not wrong. We had bought the official BGE book, which wasn't as useful as I would have liked. But this one, with just a few pages of reading, my husband declared had taught him more than any other source had for our egg. We have used the recipes for chicken wings, ribs, and brisket, and with the exception of the latter, the meat has turned out amazingly.
With the brisket, we think it's been user error thus far. Definitely a must buy if you have any type of kamado type grill. Love, Love, Love this book! So much more than a cookbook! The author provides very detailed instructions for every aspect of green egg smoking and cooking. The use of coffee grinds was new to me and to my surprise it works very well and gives a particular taste. I must confess I was apprehensive when I used it the first time, but no worries once you are done.
I do grind my coffee very fine. I don't know if that is critical but it works for me. The other recipes are great to. The text is easy to follow and the pictures makes your mouth water. This method of grilling opens a whole new world. I will never go back to conventional barbecues.
There is no comparison. I smoke a lot of meat and have been smoking for at least five years on a variety of gear and on and off for 20 years. I do not own a Green Egg, but I consider this book to be the best single source smoking book I have seen. I have recommended this book to numerous people who are using any kind of ceramic grill. I have an inexpensive kamado called Akorn Char Griller product. If you can control temperature on whatever you are using to smoke, this book has great recipes, cooking time and techniques.
